Avocados are a fantastic source of healthy fat. Most of the fat in avos is monounsaturated, like that in olive oil. This kind of fat has benefits linked to lower levels of inflammation. Inflammation is implicated as an underlying cause of just about all chronic disease (cancer, diabetes and heart disease are examples).
Fats in avocados are resistant to high heat, which means avocado oil is great for cooking. Better than olive oil actually. During high heat cooking fats can become oxidized. This may lead to the formation of free radicals. Free radicals in the body are linked to inflammation and increased risk for stroke, cancer, heart disease, diabetes, and more.
Do you make your own mayonnaise? I like to use avocado oil for this, and for many other things, because it has a neutral taste so it doesn't interfere with flavor like olive oil can.
