I love cranberry sauce.
Anyone else?
Here’s how I make it…
Ingredients
12 oz fresh cranberries
1/2 cup real maple syrup
1 tsp orange zest
1/2 an orange, peeled and juiced
1/2 cup water
2 shakes or so of ground cinnamon
Instructions
Combine ingredients in a medium saucepan on medium/high heat
Once it heats up, the cranberries will start to pop, and the mixture will thicken up
As it starts to thicken, lower the heat
Stir periodically throughout
When it’s a consistency you like, it’s done
Cool and serve
Will stay in the fridge for several days
Enjoy!
Here’s a great reason to love cranberries…
They feed Akkermansia!
Akkermansia is a beneficial gut microbe that maintains the mucosal layer of the gut. That’s where a good chunk of your immune system lies.
When that layer isn’t maintained, you can get increased gut permeability which can trigger rashes and food reactions.
Supporting Akkermansia proliferation in the gut is important, and you can do that by increasing prebiotic foods in the diet, in particular ones that contain the polyphenols that feed it, like cranberries.
